Crustless Pizza

There are a lot of recipes for alternative pizza crusts, baked with everything from almond flour to cauliflower and minced chicken.
But is the crust actually necessary?
Sometimes I make a "pizza" with just the toppings. Much quicker, and frankly - just as good!

This one was actually a fridge cleanser on a day when I had forgot to plan dinner. And that's the beauty of it. Take whatever you have, and with some cheese on top, it will taste great!

Start with some marinara sauce at the bottom of an oven dish
then put a layer of grated cheese
add what you like, I used bacon, small pre-cooked broccoli bouquets, red onion and sliced mozzarella
then put some more grated cheese on top.

Bake in a hot oven until the cheese starts bubbling and turning a nice colour, ca 10 minutes.

Serve with a pizza salad (cabbage, olive oil, white wine vinegar and pickled bell peppers, salt and pepper)
