A pie is a perfect way to use leftovers. Raid your fridge and toss in whatever you find! Well, almost.
Crust:
3 dl almond flour
0,5 dl peeled sesame seeds
1 tablespoon psyllium husk
1 tsp salt
40 g butter
1 egg
Put all ingredients in a bowl and make a dough. Use a mixer if you prefer, I use my hands. Press into a pie dish and prick with a fork, let rest in the refrigerator for about 30 minutes.
Bake in 175C/350 F for 8-10 minutes until the crust is lightly browned. Then remove and raise the heat to 200C/400 F.
Egg mix:
4 eggs
2 dl whipping cream
salt, pepper
Fill the crust with your favourites. I used
150 g diced feta cheese
5 halved cherry tomatoes
1/4 chopped bell pepper
50 g shredded salami
150 g grated mozzarella/cheddar
some grated parmesan
Pour over the egg mix. Bake for about 30-35 minutes.
